LIquid Smoke is simply a smoke-extract in a liquid form. It can be very useful for imparting a smoky flavour to smallgoods products that are cooked in an impermeable (non-smokeable) casing, or without the availability of a smoke oven.
For processed products such as cabana or ham steaks, it can be added in the desired quantity at the mixing stage. This product can also be added to brine mixes prior to pumping/soaking, or can even be painted onto whole-muscle products prior to cooking.
